Today we visited the California Academy of Climate Change Science. I’m not kidding when I say that EVERY SINGLE DESCRIPTION included a reference to how this or that animal is being affected by climate change and the encroachment of human beings. I am someone who believes that this planet and all the creatures on it were created for man by a loving Father in Heaven and that while we have stewardship over the earth and should take care of it, we ARE NOT changing the climate! If you disagree, just read the latest news about this SCAM!

I have to say that we did enjoy ourselves…after we stopped reading all the descriptions and simply enjoyed the beauty of God’s creations.
We ate dinner in the Academy Cafeteria. It is AMAZING to say the least! Mouse ordered Roasted Squash and Brussel Sprouts with Pesto and Rigatoni Pasta. It was fantastic and we’ll be making this one at home!
Roasted Squash and Brussel Sprouts with Pesto and Rigatoni Pasta (This is my version of what I saw them do!)
- Chop butternut squash into small squares
- Cut brussel sprouts into quarters
Roast both in the oven until tender. Just before serving, sautee on top of stove with olive oil until caramelized. Add desired salt. Add the following to the sautee pan:
- approximately 1/4 cup. pesto
- 1.5 cups of al dente Rigatoni
Pour into serving pan and sprinkle with desired amount of freshly grated parmesan cheese.
This is a single serving.
